Meat Loaf

I cook for one, so often and often it's just a meal.

However, meat loaf is one thing that requires cooking in volume.

2 lbs ground beef, preferably extra lean
1/4 c. olive oil
3 sticks (outer) celery diced
onion, large, diced. Celery and onion can be sauted for a few minutes to soften.
3 large eggs
1 litre canned or stewed tomatoes (stewed ones have some onion, carrot, celery and parsley) plus a tad of salt.
1/2 c. catsup
1/4 c dry mustard
go heavy on the cracked pepper
paprika or thyme.
Between 1 & 2 c. rolled oats to taste.


Break up ground beef. Add tomato, stir, add olive oil, add eggs, catsup, mustard, stirring after each add.
cover with rolled oats. pour sauteed celery and onion over all, stir.

Oil casserole dish (es) for volume of 4 qt. Add mixture. cover and smooth catsup over top. Cook 335 for 70 minutes.

Improves as cold dish on 2nd day or 3rd or 4 th if you're lucky.

ps I'm on a low salt diet, so I have to check on what things like catsup have for salt and count it.

Alright!!

That is what we like to see.

Even cooking for one, there are a lot of RV'ers that are cooking for one so those recipes would be a big hit.

Meatloaf is kind of "forgiving" if you get the recipe wrong. It's always changeable and, for me anyway, seldom the same. About your recipe, instead of catsup, try tomato paste. I make my own sauce for the topping and usually I smoke the loaf and the sauce.

Yes, I looked at tomato paste. Check the nutrition list. Anyway in Canada, the last I looked it has more salt. & that is a serious concern.

& believe it or not I've seen recipes for meatloaf with no tomato at all. :o

one thing I can say is I love meatloaf this looks like an interesting recipe I think I'll give it a try thanks :lol:
